Preheat oven to 425 degrees. Spray or drizzle olive oil on a large baking sheet and set aside. Cut zucchini into quarters and then into sticks.
In a large shallow bowl, wisk together 2 eggs and set aside. In a seperate large shallow bowl, combine bread crumbs, parmesan cheese, oregano and garlic powder.
Working with 3-4 sticks at a time, start the breading process by dunking and completely covering zucchini with egg mixture. Take zucchini sticks out of egg mixture, allowing any extra egg to drip off and place into breadcrumb mixture. Gently coat the zucchini stick completely with breadcumb mixture and place breaded zucchini stick onto the baking sheet. (TIP: dedicate one hand to egg mixture and the other to breadcrumb mixture, this ensures a tidy area and clean hands).
Continue this process until all zucchini sticks are breaded and on the baking sheet. Spray or drizzle zucchini sticks with olive oil and place into the preheated oven. Bake for approximately 12 minutes or until bottoms are brown. Using a spatula, flip each zucchini stick and bake for an additional 12 minutes or until completely golden brown.
You can pair these sticks with a sour cream and garlic powder mixture or mayo for dippping. Let zucchini sticks cool and enjoy!
