
Ratatouille

INGREDIENTS
1 Procyk Farms Green Zucchini
1 Procyk Farms Yellow Zucchini
1 Procyk Farms Grey Zucchini
2-3 Procyk Farms Roma Tomatoes
1 White Onion
3-4 Cups Spaghetti Sauce
3 Tbsp. Italian Spice or Oregeno
Fresh Grated Parmesan or Goat Cheese





DIRECTIONS
Preheat oven to 350 degrees. If you have a vegetable mandoline, use a thin to medium setting to slice all vegetables. If not, slice zucchini, tomatoes, and onion to same thickness and set aside.
In a large baking dish or round pan, pour just enough spaghetti sauce to cover the bottom of the dish evenly. Using your own desired pattern, start at one end of the pan and place zucchini, tomato, and onion in a row, repeating until row is finished. Turn pan and repeat process the opposite way. Repeat until dish is full. (If you have a round pan you will repeat the pattern in a circle to fill pan).
Add remaining sauce in between each row and crumble goat cheese or freshly grated parmesan on top. Sprinkle with italian spice and cover with aluminum foil.
Place in oven and bake for 45 minutes or until zucchini is soft. Allow to cool and enjoy!
